Ingredients

Amounts are rounded when scaled. Tick items as you gather them.

Directions

  1. Heat the oven to 375°F. Line a 12-cup muffin tin with paper liners.
  2. Whisk the oats, flour, brown sugar, baking powder, cinnamon and salt in a large bowl.
  3. In another bowl mix the mashed bananas, egg, milk and melted butter.
  4. Fold the wet into the dry until just combined. Divide among the cups, filling each about three-quarters full.
  5. Bake 18 to 22 minutes, until a toothpick in the centre comes out with a few moist crumbs. Cool 5 minutes in the tin, then on a rack.

Tips

  • The darker the banana skin, the sweeter the muffin.
  • Do not overmix; it makes muffins tunnel and turn dense.

Storing

Keep airtight at room temperature 2 days, refrigerate up to 5 days or freeze up to 3 months.

Swaps

Use any milk you like. Chopped walnuts or chocolate chips fold in well, but mind allergies.
